Clean Eating Rice With Red BeansIngredients

1 1/2 cups Harvest medley sweet brown rice
3 cups water
1 tablespoon extra virgin olive oil
1 chopped onion
3 chopped garlic cloves
1 pound Organic Turkey Sausage, from free range turkeys, cut into 1/2 inch discs
3 cans of red beans, rinsed, BPA free
1 1/2 cups Chicken Broth – Organic, Low-Sodium
1 teaspoon cayenne pepper
1 teaspoon chili powder
1/2 teaspoon black pepper
1/4 teaspoon sea salt

Directions

  1. In a large sauce pot, bring 3 cups of water and 1 1/2 cups brown rice to boil over a medium high burner.
  2. Reduce heat to low once boiling.
  3. Cover pot and continue to cook for 45 minutes.
  4. Heat 1 tablespoon olive oil over medium heat in a large saute pan.
  5. Add onion, garlic and organic turkey sausage to pan once oil is warm.
  6. Saute until onions brown and become clear.
  7. Add in the red beans, organic low-sodium chicken broth, cayenne pepper, chili powder, black pepper and sea salt to the saute pan.
  8. Mix well by stirring together.
  9. Cook concoction on medium heat for 30-45 minutes.
  10. Place the brown rice on plates and top with the bean and sausage combo.

Serves 4.
