I love avocado. It’s fully of healthy fats and nutrients. I like this avocado spread because light and tasty. It’s perfect to use instead of mayonnaise on a sandwich or burger. It’s also great as a dip for veggies or chips. Honestly, I’d be happy just eating it with a spoon…
2 medium avocados, peeled and pit removed
3 small limes (1/2 of one of them set aside)
1 clove garlic
1 tbsp tahini
1/3 of a white onion
1/4 tsp salt
1/4 tsp pepper
1/4 tsp chili powder

I love chips but potato chips lack nutritional value, are oily, and are generally empty calories. They also have a ton of salt which isn’t very healthy either. There are a lot of different veggie chips. Most people go for kale chips but to me nothing is better than beet chips.
Give them a shot at least once! After the first taste they’ll be your go-to veggie chips.
2 large beets, thinly sliced
2 tbsp olive oil

2 ounces cream cheese, softened

4 thin slices whole grain or nut bread (use a small loaf, otherwise cut slices in half)
4 – 8 thin slices feta cheese
Handful of arugula
1 tomato, sliced
Dash of olive oil
Freshly ground pepper to taste
Toast the bread slices until lightly golden. Place one layer of feta cheese slices on each piece of bread, top it with arugula and a slice of tomato. Then drizzle with extra virgin olive oil, sprinkle with a bit of freshly ground pepper and eat! Continue reading
Sometimes that craving for something salty and crunchy hits and when you have diabetes you can’t really just turn to a big bag of potato chips. They’re full of carbs and fat plus it’s really hard to portion yourself.
Want a healthier option that’s still delicious without all of the carbs? Give zucchini chips a try! You can season them however you want so you don’t need to worry about getting bored of the same flavor over and over again.

Since starting mindful eating I’ve found that appetizers make for great snacks! Sometimes I even create meals out of a few appetizers. Why? The goal of an appetizer is to be small enough to eat in a bite or two but be bursting with flavor. Well, isn’t the goal of mindful eating to eat one bite at a time and enjoy the flavors and textures? Appetizers work perfectly.
I love these feta stuffed cherry tomatoes because they have the tasty cheese mixing with the tomato but the red pepper flakes give a bit of kick. I’ve also tried an uncooked version with parmesan and basil that was great. Continue reading
