Light and Creamy Avocado DipI love avocado. It’s fully of healthy fats and nutrients. I like this avocado spread because light and tasty. It’s perfect to use instead of mayonnaise on a sandwich or burger. It’s also great as a dip for veggies or chips. Honestly, I’d be happy just eating it with a spoon…

Ingredients

2 medium avocados, peeled and pit removed
3 small limes (1/2 of one of them set aside)
1 clove garlic
1 tbsp tahini
1/3 of a white onion
1/4 tsp salt
1/4 tsp pepper
1/4 tsp chili powder
1/4 tsp ground cumin

Beet Chips and Zesty DipI love chips but potato chips lack nutritional value, are oily, and are generally empty calories. They also have a ton of salt which isn’t very healthy either. There are a lot of different veggie chips. Most people go for kale chips but to me nothing is better than beet chips.

Give them a shot at least once! After the first taste they’ll be your go-to veggie chips.

Ingredients

2 large beets, thinly sliced
2 tbsp olive oil
1 tsp salt
1/4 tsp paprika
3 cloves garlic
2 ounces cream cheese, softened
1 tbsp milk
1 tbsp lime juice
1 tsp horseradish
1/4 tsp onion powder

Arugula ToastiesIngredients

4 thin slices whole grain or nut bread (use a small loaf, otherwise cut slices in half)
4 – 8 thin slices feta cheese
Handful of arugula
1 tomato, sliced
Dash of olive oil
Freshly ground pepper to taste

Directions

Toast the bread slices until lightly golden. Place one layer of feta cheese slices on each piece of bread, top it with arugula and a slice of tomato. Then drizzle with extra virgin olive oil, sprinkle with a bit of freshly ground pepper and eat! Continue reading
