Ingredients
9 cups baking apples sliced into ¼ inch thick (Golden Delicious, Granny Smith, Northern Spy or Rome)
¼ cup of sugar
¼ – ½ teaspoon of cinnamon powder
1 teaspoon vanilla extract
Directions
Place the apples in a slow cooker with a 4-quart size. Add cinnamon and sugar. Toss to make sure the apples are well-coated.
Cover and cook until the apples are tender. Keep an eye on the apple as it should not be pureed. Add vanilla. Remove from fire and let cool.
Place in a container and refrigerate. Serve chilled.
Orange Mint Greek Yogurt
Ingredients
6 tbsp Greek yogurt (fat-free)
1 ½ teaspoons honey
1 large orange (peeled, sliced and quartered)
4 thinly sliced fresh mint leaves
Directions
Mix honey and yogurt. Stir thoroughly.
Place the orange slices in a bowl. Pour the yogurt mixture over the orange.
Top with mint. Chill and serve.
