I heard about flourless peanut butter cookies a while ago, but that just sounded so weird it took me a long time to come around and give them a try. I’m sure glad I did!

They still have a nice bit of sugar so you can’t go too crazy on them but removing the flour does lower the carb content by a bit.

Two cookies are about 14 grams of carbohydrates which isn’t bad at all for a cookie, plus they couldn’t be any easier to make.

Ingredients

1 cup sugar (you can substitute baking Splenda for some of the sugar if you wish)
1 cup peanut butter (or almond butter)
1 egg
Additional sugar to sprinkle on top

Directions

  1. Preheat your oven to 375 degrees F.
  2. Add the sugar, peanut butter, and egg to a mixing bowl.
  3. Mix well with an electric mixer.
  4. Grab a spoonful of the mix and roll into a one inch ball.
  5. Place the balls on a cookie sheet covered in parchment paper and sprayed with cooking spray. They should be two inches apart.
  6. Grab a glass, spray the bottom with cooking spray, and then dip it in the extra sugar. Press each cookie flat with the class.
  7. Bake for 9 minutes. The bottoms will be lightly browned.
  8. Let cool on sheet for 2-3 minutes and then transfer them to a wire rack to finish cooling.
