Eating a healthy breakfast is important for losing weight. If you don’t get a good breakfast you’re going to end up over eating later. It’s easy to skip preparing a healthy breakfast and grab a donut or sugary breakfast instead. The easiest way to avoid the temptation is to plan ahead!
These great little muffins are perfect because you can make a bunch up ahead of time, wrap them, and keep them in the freezer. Just reheat them in the morning and you’re all set!
Ingredients
- 8 eggs
- 2 cups frozen broccoli, thawed
- 1 ½ sharp cheddar
- 1 tsp salt
- 1 tsp pepper
- ½ tsp paprika
- ½ tsp red pepper flakes
Directions
- Preheat your oven to 375 degrees.
- Get your muffin tins (this should make a dozen muffins) and oil it.
- Whisk the eggs in a bowl. Add the broccoli and seasonings.
- Pour the egg and broccoli mixture into the muffin tins.
- Add cheese to each muffin.
- Bake for 14 minutes. You know they’re done when the eggs have set and aren’t too jiggly.
