Eating a healthy breakfast is important for losing weight. If you don’t get a good breakfast you’re going to end up over eating later. It’s easy to skip preparing a healthy breakfast and grab a donut or sugary breakfast instead. The easiest way to avoid the temptation is to plan ahead!

These great little muffins are perfect because you can make a bunch up ahead of time, wrap them, and keep them in the freezer. Just reheat them in the morning and you’re all set!

Ingredients

  • 8 eggs
  • 2 cups frozen broccoli, thawed
  • 1 ½ sharp cheddar
  • 1 tsp salt
  • 1 tsp pepper
  • ½ tsp paprika
  • ½ tsp red pepper flakes

Directions

  1. Preheat your oven to 375 degrees.
  2. Get your muffin tins (this should make a dozen muffins) and oil it.
  3. Whisk the eggs in a bowl. Add the broccoli and seasonings.
  4. Pour the egg and broccoli mixture into the muffin tins.
  5. Add cheese to each muffin.
  6. Bake for 14 minutes. You know they’re done when the eggs have set and aren’t too jiggly.
