Pizza is one of those foods I crave a lot but between the cheese, toppings, and carb filled crust I really have to be careful.

When I discovered the fact that people stuff zucchini with all kinds of things I got a great idea… how about instead of crust I just use this healthy alternative? I can still add some melty cheese and a bunch of my favorite toppings!

Remember, you can add any of your favorite pizza toppings! This is just one of my favorite ways to do them up.

You can even do them “boat style” by just cutting the zucchini in half, scooping, and doing it that way rather than as small bites.

Ingredients

2 zucchini
1 tbsp. coconut oil
1/4 lb ground turkey
1/2 tsp Italian seasoning
2/3 cup marinara sauce
2 tbsp. onion, finely chopped
1/3 cup mozzarella sauce, shredded
2 tbsp. Parmesan cheese
2 slices of bacon, cooked until crispy and cut into small pieces

Directions

  1. Preheat your oven to 375 degrees F
  2. Line your baking sheet with parchment paper. That’ll cut down on cleanup and keep your food from sticking without using more oil.
  3. Slice the zucchinis in half lengthwise.
  4. Cut the halves into 1-1/2 to 2 inch pieces.
  5. Use a melon baller to create a “bowl” inside each zucchini bite.
  6. Set the bites on the baking sheet.
  7. Grab a saucepan and heat up the oil.
  8. Add the turkey and Italian seasoning and cook throughout. Make sure to crumble it as you cook it!
  9. Drain the turkey and add the marinara sauce.
  10. Cook over medium heat until the sauce is hot.
  11. Scoop a large spoonful of the meat and sauce mixture into each zucchini bite.
  12. Add chopped onions.
  13. Sprinkle each with a generous bit of the mozzarella and a sprinkle of Parmesan.
  14. Add some of the chopped bacon.
  15. Cook in the oven for 7-10 minutes or until zucchini is tender.
