One of my favorite desserts has always been cheesecake but how do you take something that’s literally packed with sugar and make a low carb version that actually tastes good? Try this on for size. You could also change it up and make all kinds of flavors of this same dessert very easily.

Ingredients

Two boxes strawberry gelatin
1 cup water
Two boxes cream cheese (you can use low fat if you want)
1/2 tub of Cool Whip (8 ounce package)
1 graham cracker crust

Crust

10 graham cracker sheets
1/4 cup Sucanat or evaporated cane juice
1/3 cup melted buttery spread or safflower oil

Crush the grahams to make crumbs. Stir in the Sucanat and melted buttery spread. Mix well and turn the mixture out into a 9-inch pie pan. Press it outwards to cover the bottom and sides of the pan.Bake the crust for 8 minutes at 375 degrees. Cool thoroughly before using. Continue reading

Well, you can actually make a healthy version with a great flavor and the same texture as ice cream using bananas!

This recipe can be made quickly and easily any time and customized to your tastes. All you need to do is freeze the bananas ahead of time.

I like to buy bananas when they’re on sale, peel them, chop them, and freeze the banana coins for smoothies or “ice cream.” Continue reading
